From the day I opened Timos, the restaurant, until I sold it twelve years later, my emphasis was always on the food. I hired others to deal with the front of the house, the bar and liquor purchasing, the bookkeeping, etc., but I always ran the kitchen myself, the chef reported directly to me, not to the manager.
I always thought of the food as the raison d’être for the restaurant. It had to be very good. By that, I do not just mean good tasting: we did our best to buy fresh, not frozen, and if possible, organic and produced in a sustainable manner. My feelings about food have not changed, so it seems appropriate to dedicate part of this site to its healthy aspect and to all things related to the environment, to promote the consumption of non-processed foods, to keeping this planet green.
That is why I am calling this section of the site “Green Earth”. I am working on finding good content on the subject. I will not be able to put together all the material I want to make available to my site visitors, but I will be providing links to other sites that fit what I have in mind; this will be my contribution to inform and educate, to make this planet a better place to live.

I am going to start by recommending the best site I have seen so far on our subject, http://www.naturalnews.com. You should definitely visit – and subscribe to their newsletter.
I was fortunate to obtain permission from NewsTarget to republish their fantastic collection of cartoons – satirical, yes; but they make their point faster and better that a lot of boring articles. Check them out, I promise you will enjoy them and simultaneously become aware of a lot of things about our corrupt government in general, our sick healthcare system – and the media and big corporations and false labeling … and more.
