Cebollas Encurtidas
Yucatan style pickled onions

Ingredients:
Boiling hot water
3 medium sized white onions, thinly sliced
3 cups white distilled vinegar
4 tsp salt
1/2 tsp toasted oregano
2 habanero chilies, minced

Make the pickled onions:

  1. Pour hot water over onions to just cover, let soak for 3 minutes, then drain completely.
  2. Cover onions with the rest of ingredients, let season at least 1 hour
